I just had this for lunch and it was delicious! I was very skeptical of this tasting any good but it was sooo tasty and the best part is that it’s cheaper than tuna! The humble chickpea is so versatile – they are a rich source of vitamins, minerals, and fibre, they improve digestion and the best bit for me is they aid weight loss as they keep you fuller for longer! Chickpeas are also high in protein and essential amino acids. I would recommend you use the chickpeas in a jar – they are much softer and easier to mash.
1 x 540g jar of chickpeas
1 x tbsp tahini paste
1/2 x red onion – finely chopped
1-2 cloves of garlic grated
1 x tbsp dijon mustard
1 x tbsp capers – chopped
2 x tsp lemon juice
1 x tsp sea salt
1 x tsp ground black pepper
Optional: finely chopped baby gherkin, chopped fresh dill, sweetcorn, lettuce, cucumber, tomato.
In a large bowl, add the drained and rinsed chickpeas.
Mash the chickpeas until quite smooth, but leave some texture (some people prefer to pulse the chickpeas in a blender but I used a regular potato masher) then grate in the garlic cloves.
Finely chop the red onion and add to the mixture with the tahini paste, lemon juice, dijon mustard, and chopped capers.
Now mix everything together with a spoon and add your salt and pepper. Check the seasoning and add chopped baby gherkin or sweetcorn etc if using.
Make your sandwich, baguette, or bagel and spread the mixture on, adding fresh lettuce, cucumber, and sliced tomato – promise you won’t feel hungry for a good few hours after!
