These pancakes are great for kids and can be thrown together really easily. You can add any number of little extras; chopped bananas, blueberries, figs, strawberries etc. If you don’t want to use honey, you can use maple syrup or agave nectar. This is a great little recipe if you have guests staying over and want to make a delicious breakfast.
Ingredients
2 cups of organic plain flour
1 x tsp dried yeast
1/2 tsp salt
1 x tsp sugar of your choice
1/2 tsp cinnamon
2 cups of warm water
For garnish
warm honey
chopped walnuts
Method
Pour the warm water into a large bowl and add the yeast. Stir the yeast until dissolved. Then add in the flour, salt and sugar and whisk to a smooth batter.
Cover the mixture and set aside for 20 minutes and it should start to thicken and bubble a little.
Heat a heavy-bottomed or non-stick frying pan with about 2tbsp of vegetable oil, when hot spoon in about 2 tbsp of mixture. Depending on the size of your pan cook singularly or about 2 at a time.
Cook for a few minutes, then flip over and cook until golden brown.
Drain on kitchen paper and keep cooking until all the batter has gone.
Now you can drizzle with warm honey or maple syrup, chopped walnuts and fruit of your choice – a nice cup of coffee and Bob’s your uncle!!
