Steamed Cabbage

A delicious side dish  – easy to put together and like all West Indian dishes – it tastes wonderful! I eat this with a veggie curry and if I am feeling naughty – a cornmeal dumpling 🙂 The best bit of all is this is cheap and most things you will already have at home.


Ingredients
1x tbsp olive oil
2 x tbsp butter (or vegan alternative)
1 x white cabbage  – shredded finely (I used my mandolin but rough slices is fine also)
1 x carrot  – cut into thin strips (this is not a science! cut it how you like it!)
1 x white onion – cut into thin slices
A couple of spring onions cut into strips
1/2 red bell pepper – cut into thin strips
1 x small tin sweetcorn
1 x tsp sea salt
1 x tsp cracked black pepper
1 x tsp dried thyme

Method
In a medium pan, gently heat the olive oil and 1 x tsp of butter or vegan alternative. When the oil is hot add in the vegetables and the sweetcorn, coat in the oil and butter.
Add in the salt, pepper and thyme – coat everything.
Bring the heat down a little, put the lid on the saucepan and let the veg steam for about 10-12 minutes (I like to leave a little crunch in the veg)
When cooked add in the last tsp of butter and stir it through the steamed veg.
This dish goes well with anything really and still tastes good warmed up the next day 🙂
