One of my favourite dishes for the summer and it gets better after a day or so! I know I love all things Greek but Cyprus potatoes are the ONLY ones for this dish 🙂 I much prefer this to the claggy mayonnaise variety.
Ingredients
1kg Cyprus potatoes
½ small glass of olive oil
1 x medium red onion
Juice of 1 lemon
Parsley – finely chopped
4 x tbsp of red wine vinegar
Salt & pepper
Method
Peel potatoes and boil (whole) until tender
Allow to cool and then slice (I like to make thick slices but chunks is fine too)
Place potatoes in a salad bowl
Slice the onion finely and add to bowl
In a separate jug add oil, lemon juice, red wine vinegar, parsley and salt & pepper
Pour over the potatoes and onions and mix well – chill in the fridge for a few hours before serving.
